My Ultimate Chocolate Cookies are super moist, fudgy, rich and decadent with a surprise your taste buds will love!

Those of you that have read previous posts know that I am not a baking lover, but today I had this crazy inspiration for these chocolate cookies. They truly are the ultimate in chocolate goodness. Baked completely from scratch, I keep telling myself they are “healthy cookies” because they are made using dark cocoa powder and dark chocolate chips! Dark chocolate is healthy right?! All they need is a big tall glass of icy cold milk!
The one thing that I do like about baking cookies as opposed to other desserts is the fact that you can make a big batch of dough, bake a few cookies and store the rest of the dough in the refrigerator for another time. This way you can always have warm gooey cookies straight from the oven!
My ultimate chocolate cookies have a little surprise inside them. I use a special blend of espresso powder, cinnamon and cayenne pepper that gives the cookies just a hint of heat that balances out the chocolate so nicely! The Method of The Ultimate Chocolate Cookie
ingredients:
- flour
- baking soda
- salt
- dark cocoa powder
- instant espresso powder
- cinnamon
- cayenne pepper
- butter
- sugar
- brown sugar
- eggs
- vanilla
- dark chocolate chips
- maple sugar
- fine flakey sea salt
basic instructions:
Whisk together flour, baking soda, salt, dark cocoa powder, espresso, cinnamon and cayenne pepper in a medium size bowl. Add butter, sugar and brown sugar to a stand mixer.



Cream. Add eggs one at a time and then the vanilla. Slowly in 3 batches add the dry mixture. Once combined stir in chocolate chips. Scoop onto baking sheets.



Bake at 350 degrees for 8-12 minutes depending on your oven. As soon as the cookies come out of the oven sprinkle on the maple sugar and flaky sea slat. Transfer to cooling racks and cool 20 minutes.

Tips for success:
Using good products like organic eggs, Dutch processed cocoa powder and real vanilla extract make a big difference in the quality of the cookie.
recipe variations:
Walnuts or pecans would be a nice addition!
Cook the dough in a personal sized skillet then top with ice cream and chocolate sauce for a super decadent dessert!
These would also make great ice cream sandwiches! Just place a scoop of ice cream between 2 cookies, roll in extra chocolate chips, toffee pieces or sprinkles.

- Whisk

- cooling rack
- 2 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup dark cocoa powder
- 3/4 tsp instant espresso powder
- 3/4 tsp cinnamon
- 1/2 tsp cayenne pepper
- 1 cup butter, room temperature
- 1 cup white granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 10 ounce bag dark chocolate chips
- maple sugar
- flakey sea salt
Pre-heat oven to 350 degrees.
Whisk together flour and next 6 ingredients (through the cayenne pepper) in mixing bowl.
Add butter, sugar and brown sugar to stand mixer and cream. Add 1 egg at a time followed by the vanilla.
Slowly add 1/3 of the dry mix and incorporate. Repeat with second third and then one more time.
Stir in the chocolate chips.
Scoop on to sheet pans.
Bake anywhere from 8-12 minutes depending on your oven. Remove from oven and immediately sprinkle on maple sugar and sea salt. Transfer to coolin racks for 20 minutes.
These are delicious. The cayenne, cinnamon and espresso powder give them a lovely zip!!!
