Summer is made for grilling! Picnics and parties have us feeding larger than usual crowds, so it is much cheaper to buy lesser “cuts” of meats like London Broil, that need to be marinated. With super, fresh-from-the-farm local meats and produce, this versatile 7 ingredient marinade will intensify the flavor of your food along with tenderizing it. Wet marinades like this one are a combination of oil, spices, herbs and some sort of acid be it citrus, vinegar or wine.
This family marinade has been a staple in my life since I was a child. I remember vividly the London Broil marinating away and I couldn’t wait for dinner! It is tangy and zesty from the lemon juice, a little spicy from the garlic, with just a hint of salt and pepper.

The Method of the BEST 7 Ingredient Marinade

- lemon
- kosher salt
- pepper
- garlic
- thyme
- onion
basic instructions:
Making the best 7 ingredient marinade is as easy as 1-2-3! There are actually 2 ways to do this. The first is being to combine all ingredients in a bowl then pour over what needs to be marinated. This way works best for vegetables or kabobs. When marinating a large piece of meat, I find it best to keep the onion slices large and the thyme stems whole. Place them on top of the meat followed by the rest of the marinade.



Grill meats to your liking. Vegetables can be sliced in half, marinated then grilled or cut them into thick slices, marinate then grill kabob style.

The longer you can marinade the better!
When grilling meats remember to let them rest. This allows the juices to reabsorb into the meat.

Marinate beef kabobs with onion and red peppers.

I tend to use this on grilling meats that need a long marinating time like London Broil, so any type of salad such as a potato, pasta or coleslaw would be great. Buttery salt potatoes in the summer or a crispy onion rings would be delicious too.

The BEST 7 Ingredient Marinade

Tangy and fresh, this marinade is perfect for both meats and vegetables.
- Cutting Board
- chef knife
- dressing mixer
- 1/2 cup extra virgin olive oil
- 1 lemon, juiced
- 1 tbsp kosher salt
- 1/2 tsp fresh ground pepper
- 1 garlic clove, minced
- 5-7 fresh thyme sprigs (remove leaves for option one or keep sprigs whole for option 2.)
- 1 large Vidalia onion (dice the onion for option one or slice for option 2.)
Mix the oil and next 4 ingredients in a dressing jar. Make sure it is thoroughly combined.
At this point there are 2 options. The first option is to add thyme leaves and diced onion to the marinade then pour over your meat or veggies. The second option is to keep the thyme sprigs whole, slice the onion into 1/4 inch pieces and place on the meat (this is better for large pieces of meat like a London Broil). Then pour the rest of the marinade over top.Â
