This summertime Cossack Salad is not only quick and easy, but it is the perfect refreshing side to any main dish!

This recipe takes me back to my childhood! As you know, I didn’t have much of an interest in cooking as a child, but this was one recipe I did love to make every summer. The original recipe came from a cookbook I had called Small World Cook & Color Book. Although, sadly, over the years I seem to have misplaced the cookbook, I somewhat remembered the recipe and continued to make it. Fortunately, after ransacking my mother’s house in search of my old cookbook to no avail, I was lucky enough to find a website that actually had it and I was able access the recipe! Well considering my memory has faded over the years, I was pretty accurate with the ingredients but I have added a few more for some added zing and freshness.
Please know, that with the current state of affairs regarding this particular country, I really debated whether or not to post this summertime Cossack Salad, but the little girl in me that had fond memories of the actual salad overruled. I hope you will enjoy it as much as I and my family has.


Personally I love cucumbers and radishes and could eat them all day long fresh from the garden! The egg being in this dish though never really jelled with me so I have always left it, but by all means add it if you like.
The Method Of Summertime Cossack Salad
ingredients:
- mini cucumbers
- radishes
- vinegar
- sour cream
- sugar
- kosher salt
- pepper
- fresh dill
basic directions:
To start this summertime Cossack Salad, wash and dry the vegetables. Slice them thin and place in a medium sized bowl.



Next, make the dressing by add the sour cream, vinegar, sugar, salt, pepper and dill in a small bowl. Whisk to combine. Add to the cucumbers and radishes and stir gently. Chill until ready to serve then sprinkle on extra dill just before serving.

Tips for success:
Add the dill to the dressing as soon as you chop it. This keeps the herb from browning.
Refrigerate until ready for use.
recipe variations:
I used a package of 6 baby cucumbers, but you could used 1 or 2 English Cucumbers. If you are going to use a standard garden cucumber, I recommend peeling and seeding it prior to slicing.
Really I think any summer garden vegetable would be delicious with this dressing!

Summertime Cossack Salad

Fresh ingredients straight from the garden make this the perfect side dish to any summer meal!
- Cutting Board
- chef's knife or mandolin
- medium mixing bowl
- small bowl
- Whisk
- measuring cups and spoons
- serving spoon
- 6 small cucumbers, sliced thin
- 1-2 bunches radishes, sliced thin
Dressing
- 1 cup sour cream
- 2 tbsp champagne or white wine vinegar
- 2 tbsp sugar
- 1 tsp fresh dill, plus more for garnish
- 1/4 tsp kosher salt
- 1/4 tsp fresh ground pepper
Place prepared cucumbers and radishes in a medium sized mixing bowl.
Whisk the sour cream and next 5 ingredients together in a separate bowl. Add to the vegetables and stir gently to combine.
Refrigerate until ready to serve.
Garnish with added dill just before serving.
