These salt potato diner style home fries are quick, easy and taste just like my favorite diner side dish!

There is nothing tastier than heading out to a truck stop style diner and ordering up a platter of eggs, home fries, breakfast meat and a cup of joe to wash it all down. Especially after a late night of partying! BUT, wouldn’t it be great to easily make those tasty golden nuggets at home while sitting in your pj’s? I promise, these home fries will not disappoint. These are so delicious, they are not just for breakfast. Serve them along side my Fried Green Tomato BLT’s or my Grilled Chicken Kabobs.
Salt potatoes are young white potatoes harvested in summer. They are cooked in very salty water and then smothered in butter. By using leftover salt potatoes you are already starting with a soft, creamy, salty and buttery interior. Cooking over medium high heat in melted bacon grease adds flavor as well as a crispy crunchy exterior that creates the perfect home fry texture. Just before I finish cooking, I add garlic powder and paprika for an added savory bite.
The Method of Salt Potato Diner Style Home Fries
Ingredients:
- salt potatoes (leftover)
- bacon grease
- fresh ground pepper
- paprika
- garlic powder
- chives
basic directions:
The first step when making salt potato diner style home fries is to cut up the potatoes into bite sized pieces. They can be any size you like. Next, over medium high heat, melt enough bacon grease to cover the bottom of a cast iron skillet. Toss in the potatoes and cook until browned, stirring occasionally. When they are almost completely brown, sprinkle on fresh ground pepper, paprika and garlic powder. (I have no measurements for the spices…I just sprinkle and taste!)

tips for success:
Make sure to cook enough salt potatoes when so you will have leftovers. You can always cook a bag of salt potatoes with the intention of making them into home fries. This would be a great idea if you are hosting a brunch or have a large family.
recipe variations:
After adding grease to the skillet, add in diced onions and caramelize before adding in potatoes.
Brown up some breakfast sausage and onion, then add in the potatoes.
serving suggestions:
When the home fries are ready, place individual serving sizes in ramekins and top with a fried, sunny-side up or over easy egg.
Try salt potato diner style home fries as a side to some grilled meats along with a fresh crisp salad.
Top with a dollop of sour cream, some smoked salmon, dill and capers.
