Pork Roulades are easy to prepare yet elegant to serve.

You might be wondering what pork roulades are. Simply put, it is something that is rolled up. It can be anything from meat to produce to sponge cake, but most typically it is a meat. Before it is rolled, it is stuffed with something, in this case cheese and tomatoes. I like to think of it as a cute little bundle of deliciousness!
Pork is a great protein to use, especially thin cut pork chops. Not only are they lean, but they are often on sale which makes them inexpensive. When they are, I buy the large package then divide them up and freeze for future use. I know bacon is not cheap, but trust me you don’t want to skip it. Bacon has that delicious salty crispy bite and c’mon who doesn’t love pork on pork?! Boursin cheese is so creamy with all the garlic and herbs needed to pack a punch of flavor. That is a real timesaver.

The Method of Pork Roulades
ingredients:
- pork
- bacon
- soft garlic herb cheese
- sun dried tomatoes
- flour
- spices: kosher salt, pepper, garlic powder, paprika
- eggs
- grainy mustard
- breadcrumbs
- parmesan cheese
- oil
basic directions:
Pork Roulades start with a thin cut of meat. Thin cut pork chops or even pork tenderloin are the two options I suggest. Pound the pork so it is paper thin. Spread cheese on one side of the pork and top with the tomatoes. Roll up, wrap bacon around it and secure with a toothpick or kitchen string.
Dredge in flour mixed with spices, then egg whisked with mustard and finally breadcrumb parmesan mix. Heat oil in cast iron skillet and brown. Transfer to a baking sheet and bake until cooked through.

Let everything stand at room temperature for 30 minutes before preparing the meal.
Don’t forget to remove the toothpicks or string before serving.
