My Moonstruck dish is a simple yet delicious meal that can be served for breakfast or for dinner!

Have you ever eaten an egg-in-a-hole? Otherwise known as an egg inside a piece of toasted bread? While an egg-in-a-hole can be a delicious breakfast staple, I wouldn’t consider it hearty enough to be eaten for other meals. This moonstruck version is like the original egg-in-a-hole, but on steroids! What sets it apart from the typical egg-in-a-hole is the Italian bread and the roasted red peppers. These make it more of a meal that can be enjoyed any time of day and we often have it for dinner!
Moonstruck, if you have never heard of it (I am dating myself lol) was a movie that came out in the year 1987, the same year I graduated from college. I remember watching it with my mother, both of us fascinated by the breakfast Rose (Olympia Dukakis) made for Loretta (Cher). Naturally it looked so delicious that we had to replicate it and I am so glad because I have been eating it ever since! And my kids love it!
The key to this moonstruck breakfast is slicing the bread thickly on a diagonal. It creates a bigger surface area to work with. The thickness and texture of the bread allows it to soak up all the olive oil, salt and pepper. I like to tear the whole in the center instead of using a cutter. It gives a more rustic look. Then I soak that little topper in the oil and brown it nicely. The egg needs to have a nice runny yolk. Then top it all off with roasted red peppers which add a delicious sweetness needed to cut through the richness of the dish.
Try this dish and I promise you won’t be disappointed! Perfect for one, two, a family, brunch, lunch or dinner, it is a tasty meal you can even entertain with.
The Method of Moonstruck
ingredients:
- sweet red pepperÂ
- extra virgin olive oil
- eggs
- Italian bread
- kosher salt
- fresh cracked pepper
basic instructions:
The first step in making this Moonstruck dish is to saute the peppers in oil. Coat the bottom of another skillet with oil and heat over medium heat. Place the bread, with the center torn out in the oil. Add the egg to the center. Keep the center pieces of the bread in the skillet to toast.



When the bottom starts to brown, flip the bread over. Salt and pepper the toasted side. Turn the heat down, add the egg and cook until it is set, but the yolk is still runny. (I poke holes in the whites during cooking with a fork to make sure they cook through).



Remove the toasted bread with the egg to a plate and smother it with peppers and top with the “hole” of the bread.

recipe variations:
You could use jarred roasted red peppers for the sake of time, but I find them to be too soft. You could also switch up the sweet pepper for a spicy pepper!
serving suggestions:
For dinner serve with a crisp side salad like my Italian Chopped Salad
For brunch serve with a Ham steak, Bacon or Breakfast Sausage, some Roasted Fingerling Potatoes or my Salt Potato Diner Style Home Fries and don’t forget a Mimosa or Bloody Mary!

Moonstruck

This Moonstruck dish was made famous in the namesake movie. It is a quick and easy meal that can be served any time of day!
- 1 red pepper (sliced to 1/4 inch strips)
- extra virgin olive oil
- 2 eggs
- 2 slices Italian bread (sliced 1 inch thick)
- kosher salt
- fresh cracked pepper
- Over medium-low heat, add extra virgin olive oil (about 2 tablespoons) to a non-stick skillet then add the red pepper. Cook until the pepper is softened.
- To another skillet over medium high heat add enough oil to coat the bottom and add your Italian bread in the center with the "hole" pieces to the side. Crack the eggs into the hole space. Once the bottom is toasty brown, flip the bread and sprinkle with salt and pepper. Place a lid on top and turn heat to medium low. You want the egg to cook through enough so nothing clear runs out, but the yolk should remain runny.
- When done, remove toasts to a plate, cover with red pepper and the toasted "hole" pieces.
