This easy weeknight skillet dinner is the perfect quick all in one comfort meal!

Who doesn’t love a home cooked meal all in one skillet? It’s the go to meal when you want a no fuss supper and it makes for the easiest clean-up ever! This supper is as tasty as it is hearty and can be made in 30 minutes. The bacon adds the right balance of saltiness, the beans add a creamy texture and the BBQ sauce and hot sauce add a savory depth of flavor and richness. Top it off with loaded cheesy mashed potatoes and it truly becomes comfort food at it’s best!
This easy weeknight skillet meal was not expensive to make either. Feeding a family of 5-6 would cost about $15 not including the side salad! I bought the pork tenderloin for $11 and you may be thinking that is expensive, but remember there are 2 tenderloins in a package and I only used 1. I also only used half of a package of bacon and froze the rest for breakfast sandwiches or another dinner. The BBQ sauce and hot sauce are staples in my pantry (yours too probably). I had potatoes and the other ingredients for them in my refrigerator, but you can buy pre-made loaded potatoes for under $4.
The Method of Easy Weeknight Skillet Dinner
ingredients:
- pork tenderloin
- baked beans
- bacon
- BBQ sauce
- hot sauce
- loaded mashed potatoes
Basic Directions:
To make this easy weeknight skillet dinner first cook the bacon until crisp, then remove it to a paper towel lined plate. Saute the pork in the leftover bacon grease until browned, but not cooked through. Add the baked beans and return the bacon.



Stir in the BBQ sauce and the hot sauce. Cook your potatoes, then add the next 5 ingredients to them and combine thoroughly. Spread the potatoes on top of the pork mixture.



Cook at 350 degrees for 15 minutes then place under the broiler until brown!

Tips for success:
Cutting the bacon ahead of time makes it easier and faster to cook.
When making mashed potatoes, always make extra for weeknight meals like this. You can always freeze them in portions then thaw the day of use.
Recipe variations:
Any type of baked bean, BBQ sauce or hot sauce will work. Choose your favorites.
If time is at a premium for you, but $$$ is not, you can buy pre-cooked bacon and heat it up in the microwave.
You can replace the pork tenderloin with ground pork or even chicken if it is one sale!

Storing:
This will stay fresh in the refrigerator for up to 3 days in an air tight container or up to 3 months in a frezer safe container.

Easy Weeknight Skillet Dinner

This is a quick one skillet meal making it the perfect weeknight dinner!

- 1/2 pound bacon, cut to half inch pieces
- 1 pork tenderloin, cut to bite size pieces
- 16 ounce can of baked beans
- 1/4 cup BBQ sauce
- 8-10 drops hot sauce
- 2 cups loaded mashed potatoes
Loaded Mashed Potatoes
- 3 medium Yukon Gold potatoes, peeled, cooked and mashed (can use ready made store bought or leftover)
- 2 tbsp butter
- 1/2 tsp fresh ground pepper
- 1/4 cup sour cream
- 2 scallions, thinly sliced
- 1/2 cup cheddar cheese, shredded
Cook bacon until crisp. Remove to a paper towel lined plate, saving the grease.
Saute the pork in the bacon grease until browned, but not cooked through.
Add the baked beans and return the bacon.
Stir in the BBQ sauce and the hot sauce.
Either make your potatoes or add the next 5 ingredients to existing potatoes.
Spread the potatoes on top of the pork mixture.
Cook at 350 degrees for 15 minutes then place under the broiler until brown.
