Summer is meant for salads and my Easy Skillet Green Bean Salad is sure to not disappoint!

I don’t know about you, but I can’t get enough of salads during the summer. My wheels are always turning as I walk through my local farmer’s market looking at what has just been freshly picked. Green beans are one of my favorite vegetables, but I don’t want to eat them cooked all the time. Don’t get me wrong, I love a good skillet cooked bacon dripped green bean and of course a green bean casserole at Thanksgiving!
This is a fresh take on a crisp salad using a variety of garden ingredients along with some creamy, salty cheese topped with a tangy mustardy dressing. It is “Ooooh so good”!
The Method of an Easy Skillet Green Bean Salad
ingredients:
- green beans
- water
- kosher salt
- extra virgin olive oil
- garlic
- red chili flakes
- sweet onion
- tomato
- feta cheese
- dressing- your own or mine follows the directions
basic directions:
The first step in making this Easy Skillet Green Bean Salad is to place the green beans in a skillet with a touch of water and salt. Put a lid on and steam 2-3 minutes. Drain the beans. Add some oil to the skillet then return the beans. Toss in 1 garlic clove minced along with a pinch or 2 of red chili flakes. Saute for 1-2 minutes. Place green beans in a chilled salad bowl and put into the refrigerator for at least a half an hour to chill.
Meanwhile slice up a quarter of a sweet onion and a medium ripe tomato. When ready to serve, toss the onion and tomato with the green beans and top with crumbled feta cheese.



Top with your favorite dressing or try my homemade dressing: 3/4 cup extra virgin olive oil, 1/4 cup red wine vinegar, 1 tbsp Dijon Mustard, pinch of salt, pinch of fresh ground pepper, 1 tsp sugar. Add all ingredients to a jar and shake away. Store unused dressing in the refrigerator!

Chill the salad bowl while the beans are cooking.
recipe variations:
Top green beans with fresh herbs, heirloom tomatoes, red onion or any other in season vegetable.
Any soft creamy cheese would work such as goat or blue. There are some spectacular flavored goat cheeses at the farmers market!

This Easy Skillet Green Bean salad would be great with any grilled meat or fish such as my Grilled Chicken Kabobs or my Ginger Soy Kabobs!
