My easy baked Tortellini is saucy, cheesy and full of flavor. It’s a super easy casserole that will make your weeknights a whole lot simpler!

What is more comforting than pasta? Maybe pasta in a casserole with meat, sauce and cheeses that is hearty and filling. This baked tortellini has has all the flavors of lasagne, but cooks in a fraction of the time. It is one of those meals that is so easy to make you might as well make 2! It’s also the perfect casserole to share with a friend, to send to someone recuperating from surgery or a birth or even take to a college student during exam week.
We all need easy weeknight recipes that take little time and have few ingredients. Especially kid pleasing recipes. Pasta dishes are great because they cost little to make, are easily adaptable and feed a lot of mouths. This casserole can be adapted and changed easily to accommodate your families likes. You can also try to sneak in some ground up veggies and your kids will never know!

The Method of Baked Tortellini
ingredients:
- frozen tortellini
- Italian sausageÂ
- marinara
- ricotta cheese
- mozzarella
- parmesan cheese
basic directions:
The first step in making my tortellini casserole is to brown the sausage in a skillet draining off excess fat. At the same time cook the tortellini in salted boiling water. Mix the sauce and ricotta in a large bowl, drain the pasta and add to the sauce mixture. Next add the sausage and stir to combine. Transfer to a prepared baking dish. Sprinkle mozzarella and parmesan on top then cover with foil. Bake 25 minutes, remove foil and bake another 5 minutes.

tips for success:
Buy sausage that is already out of the casing. This makes one less step.
For a homemade taste, use your own homemade sauce!
When making extra to freeze or to share, follow the steps but do not bake. Place unbaked casserole in disposable aluminum pans. Wrap with Saran wrap followed by foil. Be sure to include baking directions.

Substitute fresh tortellini and skip cooking frozen for a quick cook.
Substitute sausage for ground beef or chicken.
You can eliminate meat by using tortellini that already has the meat inside.

The Essentials:
Baked Tortellini

This cheesy baked tortellini casserole is quick, easy and hearty!
- 1 bag of frozen tortellini (1 pound)
- 1 pound hot Italian sausage
- 12 ounces marinara
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella
- parmesan cheese (either grated or grate your own!)
- Cook tortellini according to package.
- While pasta cooks, brown sausage approximately 7 minutes.
- Mix the sauce and ricotta in a large bowl. Add the drained pasta and sausage.
- Transfer to a baking dish. (Mine is a 10 x 8" oval) Spread mozzarella over top.
- Sprinkle on Parmesan cheese, as much as you like. Cover with foil and bake at 350 for 25 minutes. Remove foil and bake for 5 minutes more to brown the top.
