Artichokes au gratin is a delicious simple side dish made from few inexpensive ingredients. It is quick and easy to make and full of flavor.

I’m so excited it is artichoke season and if you’ve never had one, you don’t know what you are missing! Although when we eat artichokes we tend to think of them as a vegetable, but technically they are a flower before it blooms. The different health benefits of artichokes range from regulating blood pressure, lowering cholesterol to improving liver function.
What does the term au gratin mean? It simply means topped with breadcrumbs, cheese (or both) and browned. You have probably have heard of potatoes au gratin. The concept is the same. This recipe is nice and light as it does not contain any cream, heavy cheese or mayo. In fact, it would be a great accompaniment to my Schnitzel since that uses similar ingredients!
The Method of Artichokes Au Gratin
Ingredients:
- frozen artichokes
- extra virgin olive oil
- kosher salt
- red pepper flakes
- garlic powder
- onion powder
- Italian seasoning
- panko breadcrumbs
- parmesan cheese
Defrost the artichokes and strain. Place in a dish and sprinkle with extra virgin olive oil. Season with salt, pepper flakes, garlic powder, onion powder and Italian seasoning. Toss well. Pour into baking dish or individual gratin dishes. Top with breadcrumbs and parmesan cheese. Bake at 400 for 20 minutes, then place under broiler until browned.



Cook’s Notes:
You can easily replace canned artichokes for frozen, but be sure to drain them well.
Try switching out Parmesan cheese for Pecorino Romano.
You can easily cook this in in one large baking dish instead of individual gratin dishes.
Too hot for the oven? Follow all the steps prior to adding the topping. Saute on the stove top in an oven safe pan. Add the topping when the artichokes are warmed through, then place under broiler for a couple minutes until browned!

- 12 ounce frozen artichokes, thawed and strained
- 2 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp red pepper flakes
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp Italian seasoning
- 1/4 cup panko breadcrumbs
- 2 tbsp parmesan cheese
Pre-heat oven to 400 degrees,
Place the artichokes in a bowl with oil. Season with salt, pepper flakes, garlic powder, onion powder and Italian seasoning. Toss well.
Pour into 2 individual gratin dishes.
Mix breadcrumbs and parmesan cheese. Sprinkle on top of the artichokes.
Bake for 20 minutes, then place under the broiler to brown.
Note: You can use a small casserole dish for this as well.
This dish is easy to double or triple.
Canned quartered artichokes work well also.
