Apple Cake with Rum Glaze is a perfect ending dessert at this time of year.

It may not look like a beauty in this photo, but what it lacks in looks it sure makes up for in taste! What cries fall more than fresh apples and cider? Apple trees are in abundance here in New York State and apple picking is the number one thing on our annual fall bucket list. After picking a bushel we make apple pie, apple crumble, baked apples, and apple muffins. Now I can add this apple cake with rum glaze as a new staple! Serve it warm with ice cream for dessert or as a coffee cake for brunch. And don’t forget the apple cider mimosa’s!​
A baker I do not claim to be, but this cake could not be any easier to make. A spiced cake mix is the base that gives the flavor of fall to begin with. Adding apples and nuts compliments the cinnamon in the mix perfectly. Granny Smith apples stand up to baking and give a touch of tartness to cut through the sweetness. Driving home the apple flavor I replaced the water for caramel apple cider.
The Method Of Apple Cider Cake with Rum Glaze
ingredients:
- spice cake mix
- caramel apple cider
- vegetable oil
- eggs
- Granny Smith
- mixed candied nuts chopped
- brown sugar
- spiced rum
- butter
directions:
The first step to my Apple Cake is to make the cake batter according to the box except replace the water with apple cider. Grease a baking dish and pour batter into it. Bake according to package. Meanwhile add brown sugar, butter and rum to a saucepan and whisk until sugar is dissolved.


Remove cake from oven when a toothpick comes out clean. Let cool completely then take out of baking dish. Drizzle the glaze over the top of the cake.

Try apple butter in place of oil for an added intense flavor.
Not a fan of rum? Switch it out for apple brandy.

Apple Cake with Rum Glaze

This cake can be a dessert or a coffee cake for brunch. It has all the hints of autumn with cinnamon, apples, cider and nuts.
- 1 box spice cake mix
- 1 cup caramel apple cider
- 1/2 cup vegetable oil
- 3 eggs
- 2 Granny Smith apples (peeled and diced to 1/2″)
- 1/2 cup mixed candied nuts (chopped (substitute plain nuts or omit))
- 1/2 cup brown sugar (firmly packed)
- 1/4 cup spiced rum
- 2 tablespoons butter
- Pre-heat oven to 350 or 375 degrees depending on your pan. (follow directions on cake box)
- Mix cake mix, cider, oil and eggs for 2 minutes. Fold in the apples and nuts.
- Bake according to box.
- While the cake is baking, add brown sugar, rum and butter to a small saucepan and stir until sugar is dissolved and thickens.
- Cool cake completely.
- Pour glaze over the top of the cake and serve.
