These 2 delicious autumn salads will have you heading to your local farmer’s market for some fresh fall produce!


Autumn’s harvest yields so many delicious flavors and I find that salads are the perfect way to showcase them! Try my other 2 delicious autumn salads: Flavorful Harvest Pear Salad and another Shaved Brussel Sprout Salad! The perfect accompaniment to salad…SOUP! Chicken and Rice Soup or Cheddar Beer Soup served in a bread bowl would make these salads a complete meal!
The Method to 2 Delicious Autumn Salads
Kale and Apple Salad
ingredients:
- kale
- apples
- red onion
- candied pecans
- dried cranberries
- maple dijon vinaigrette– olive oil, dijon mustard, maple syrup, vinegar, kosher salt, pepper
basic directions:
The first step for this salad is to wash, chop and refrigerate the kale. Next mix the vinaigrette ingredients in a salad dressing shaker or even a mason jar. Just before serving slice the red onion then peel and chop the apples. Toss all ingredients in a large bowl with the salad dressing.

Caesar Brussel Sprout Salad
ingredients:
- Brussel Sprouts
- creamy Caesar dressing
- parmesan cheese
- crispy wontons
basic directions:
The first step for this salad is to wash and dry the Brussel Sprouts. Cut the very bottom off and remove outer leaves. Pulse in a food processor until completely shaved. Transfer to a large bowl and refrigerate until ready to serve. Toss with a creamy Caesar dressing (your favorite bottled dressing is fine) then top with crispy wontons and shaved parmesan cheese (not grated).

recipe variations:
For the kale salad, you can use any hearty green, any variety of apple, swap out the candied pecans for regular pecans or walnuts and try any dried fruit.
If you prefer red or green cabbage over Brussel Sprouts, either of those would be a great alternative.

Both of these salads are hearty enough to stand alone as a meal, but would also be great as starter salads or sides for any dish.
